This website contains my final year project, which I wrote in the spring of 2003 while attending Svendborg Gymnasium. I have made this website to give interested a possibility to read my project. I hope that this website gives a straightforward and well-arranged presentation of my project. I also hope that by presenting my project in this way, it can become inspiration for future young people who are going to do their final year project in for example biology. A short abstract of my project can be found in the ”Download” section.

Diacetyl is a small organic molecule, which is very interesting, since the removal of this small molecule is the limiting factor for how long the beer has to mature – the less diacetyl, the shorter maturation time - which results in a profit to the breweries. This extra profit is quite considerable since the use of enzymes for example can shorten the maturation time from weeks to days, which again is very interesting for an industry which alone in the US have a market of $210 billions.

The reason why I have gone so far with my final year project is because I came in 2nd at the 2003 “Young Scientist” competition in Copenhagen. As a result of this, I have been chosen among three young Danish scientists who attended The European Union Contest for Young Scientists in Budapest, Hungary, in September 2003. Here my project came in on a 10th place, and I'll therefore be present at the London International Youth Science Seminar 2004. Furthermore I won the Danish Nobel Competition for young scientist. The price concisted of a ticket to Stockholm and my particpation in the Nobel price ceremony in December 2003. This was by fare the biggest and most exiting experience of my life, so fare.
